Ynglŷn â Dilly's Handcrafted Chocolates
I came to chocolate making in 2018, on my birthday, when I was given some books on artisan chocolate by some great chocolatiers such as Peter Greweling and William Curley. That was it! I was smitten by the processes involved in making delicious chocolates. From the science of tempering and the magic which is making ganache to the pleasure which is decorating.
My ‘chocolatiering’ pilgrimage took me to Squires Kitchen where I took a course with Professional Chocolatier Mark Tilling, winner of the UK Chocolate Master in 2007 and 2009 and winner of the first edition of Bake Off Crème de la Crème.
After this, I completed a Course on Creative Chocolate Skills at the Callebut Academy with Julie Sharp.
I spent the year working on my skills and flavours and establishing my chocolate kitchen in Pembrokeshire, Wales and of course testing my chocolates on all my colleagues and friends.
