We recently caught up with the fantastic Matt of Matt Waldron Private Dining to discuss his love of all things Pembrokeshire, including the abundance of fresh ingredients available throughout the County.   • Why is your business in Pembrokeshire - did you move here/grow up here?

I moved to Pembrokeshire from a small village near Newport around 8 years ago. Having worked as Head Chef at a number of restaurants, my Wife and I were asked were asked to host a handful of private dining events for a few clients who knew of me and my food. Thanks to word of mouth, social media and a little luck Matt Waldron Private Dining was born. We travel across the UK and Europe providing bespoke experiences bringing the magic of a fine dining restaurant to your table through a personalised menu tailored to your palette. All planned, organised and prepared from our home in Jameston, Tenby.

  • What's your favourite thing about this part of the world?

I made it my mission to explore the coast path the minute I moved to Pembrokeshire. I spend at least an hour a day walking our two pointers on the coast path or beach. Having lived and travelled across the world I have not felt more at home as when I'm in Pembrokeshire.

I also now have amazing contacts with local farmers, fishermen, bakeries, suppliers and try where possible to use Pembrokeshire produce first. We have some of the most incredible land and sea that is so important to utilise.

I've been lucky enough to be able to showcase our amazing county and the produce we have to offer. I have recently featured on both Disney+ and BBC. Gordon Ramsay invited me to participate in a documentary “Uncharted” for Disney+ showcasing the best produce in Wales, which ended in a superb cook-off. Similarly, The Hairy Bikers documentary on the BBC was broadcast to show the best Pembrokeshire offers. I introduced Si and Dave to my food ethos - simple but focused on flavour.

  • Tell us something about your business that people might not know.

As we host events for both intimate parties and large gatherings, some may think we have a huge team within Matt Waldron Private Dining however we are a team of 2. My number 2 is my wife Jordan, a former Professional GB Athlete that takes care of everything behind the scenes and ensuring guests have a memorable time during their evening.

  • What is your favourite Pembrokeshire ingredient

It has to be Pembrokeshire new potatoes. So versatile, subtle flavour and creamy texture when cooked. They also have Protected Geographical Indication (PGI) status which is incredible for our small but mighty county.

  • If you were to design a 'Pembrokeshire on a Plate' menu, what dishes would you be serving?

SOLVA CRAB RAVIOLI

shellfish bisque, braised fennel, pickled sea herbs

ROAST PEMBROKESHIRE BEEF

preserved garlic, peas, Angle asparagus, braised red onion, celeriac puree, red wine sauce, Pembrokeshire new potatoes

PEMBROKESHIRE MILK AND CHOCOLATE

Honeycomb, milk jelly, chocolate shards, milk ice cream, chocolate cremeux
